Baked Aquanaria Sea Bass

Ingredients

  • 1, 2kg Aquanaria Sea Bass
  • Two big potatoes
  • A large lemon
  • Extra virgin olive oil
  • Salt, pepper and fresh herbs
  • A large onion
  • Homemade Fish Broth
  • Two or three garlics
  • A little bit of saffron

Elaboration

  • Preheat oven to 200°, without fan, up and down.
  • Add some Extra Virgin Olive Oil to the bottom of the plate where the Sea Bass will be cooked.
  • Cut the lemon into slices and use half of it as a bed for the Sea Bass.
  • Place Sea Bass on top and use the other half of the lemon in slices to protect it from the heat.
  • Stuff it with the salt, garlic, spices and herbs.
  • Peel and thinly slice both the potatoes and the onion.
  • Place around Sea Bass in the oven dish, season with salt and pepper, add the saffron and the egg.
  • Bake for 15 minutes.
  • Remove Sea Bass and add the potatoes and onion with the fish broth, bake again for 15 minutes.
  • Serve in portions, with the potatoes and onion as a garnish.
